Open-Faced Crab Melts

Here's a quick and easy one for those days when you just can't face one more task.
When you really need someone else to be cooking for you and not the other way around.
And you know that's not going to be happening any time soon.
So you pull out this recipe-
quick, hot, nutritious, and with all that cheese, fairly indulgent.

Open-faced Crab Melts
Ingredients:
4 English muffins, split
1 pkg. crabmeat
1/3 cup mayonnaise
1 tablespoon lemon juice
1/2 teaspoon pepper
1/4 teaspoon dried tarragon
1 cup shredded cheddar cheese
Method: Broil English muffins 4-6 inches from the heat for 2-3 minutes or until golden brown. In a bowl, combine the crab, mayo, lemon juice, pepper and tarragon. Spread over each muffin half; sprinkle with cheddar cheese. Broil for 2-3 minutes or until cheese is melted. Yield: 4 servings.

You're kidding, right? We had grilled cheese last night! LOL I tried to liven it up with Sharp New York Cheddar-delish!
